If there’s anything I despise more than waking up, it’s facing the real world… and I’m sure I’m not alone. The thought of going head to head with my reality, from my boring days at school, rising early for my internship, staying-in during weekends, the only hour that gets me remotely excited is lunch time. The concept of just putting life on pause to enjoy some delicious meals is an extraordinary one, so it’s only normal that the days I don’t have a decadent lunch, everything pretty much sucks. This was all seriously difficult until, well, until I decided to conduct a little research to ensure no bad lunch days (paramount to bad hair days) never occurred again.
So, whether you’re looking for easy sandwich recipes to prepare in the wee five minutes before you have to catch the subway, lean cuisine alternatives, or quick lunches for your children, fear not, below is my compiled surefire list of scrumptious recipes for the lazy goose in all of us.
1. Croissants, tomato, and cream cheese
For a more untraditional way, substitute the bread for a croissant, slice a tomato and spread cream evenly. Last step? Enjoy.
2. Goat cheese, walnuts, honey, and basil
This option is the definition of balance of crunchy and soft, sweet and tangy. For a healthy meal with the right amount of taste, spread goat cheese over toast, pile up with a layer of basil, sprinkle honey, top with walnuts and voila!
3. Roasted red pepper hummus, avocado, and feta cheese
If you enjoy Mediterranean food, this is the option for you. Roasted red pepper hummus can be enjoyed over toast alone, but if you’re looking to open up your options, add a layer of diced avocado and some feta cheese.
4. Roasted red pepper, baby arugula, and goat cheese
For a simple and light meal, roast red peppers, slice them, apply a thin layer of goat cheese on toast and combine with baby arugula for THE veggie delight.
5. Mayo, tomato, salt, and pepper
For the days you’re beyond lazy, apply a thin layer of mayo to bread, a sliced tomato, and top with salt and pepper for maximum yumminess.
6. Ricotta, carrots, peppers, and broccoli
For a salad-turned-sandwich, apply a layer of ricotta and add chopped carrots, peppers, broccoli for a snack you won’t forget to pack.
7. Cream cheese and cucumbers
A layer of cream cheese and some fresh cucumbers calls for some fine dining, I’d say!
8. Avocado, lettuce, tomato, and mayo
I promise this isn’t Subway. Add some sliced avocado, tomato, mayonnaise and you’re good to go. For a healthy and light pre-workout meal, this is the way to go.
9. Cottage cheese, blackberries, and cinnamon
Not feeling the veggies and craving something filling yet sweet? Add a layer of cottage cheese, top with blackberries and sprinkle cinnamon for a treat you’ll start craving at dessert time.
10. Strawberries with blueberry cream cheese
Once again, if you’re in the mood for some delectable sweet and wholesome dishes, switch up your routine with blueberry cream cheese spread and sliced, fresh strawberries picked at your local strawberry farm or farmer’s market.
So, there you have it! Some fun and easy recipes on-the-go for all your necessities. The next time you need a quick sandwich fix, don’t forget to thank me.
