Dussehra 2017 is just around the corner! Vijayadashami which is also known as Dussehra is one of the most important Hindu festivals celebrated in India. Is it celebrated at the end of Navratri every year by Hindus across the country to mark the victory of Goddess Durga over the demon Mahishasura. This festival that marks the victory of good over evil, is celebrated with great fervor. On this day families come together for celebration, distribute sweets and gifts, visit their friends and family members. People prepare many traditional delicacies on this auspicious day. Today we share with you one such delicious recipe of jaggery rasgulla, which has been shared to us by Chef Kasiviswanathan, Executive Chef of Radisson Blu Atria Bengaluru. The chef has shared with us a rather simple way to make these delicious jaggery rasgulla that will definitely melt in your mouth. Though the popular syrupy dessert rasgulla is usually made from ball shaped dumplings of Indian cottage cheese, semolina dough, cooked in light syrup made of sugar. In this recipe the sugar syrup has been substituted with a healthy ingredient; jaggerry. Instead of buying sweets from a nearby sweet shop, you can actually prepare these delicious sweet at home. Here are the list of ingredients followed by the method of preparation to make jaggery rasgulla.
1 liter milk
2 kg jaggery (for syrup)
1 tablespoon freshly squeezed lemon juice
800 ml water
Take a heavy bottom pan and pour 1 liter milk into it. Simmer the milk.
Bring the milk to boil, and once it starts boiling, add one tablespoon of freshly squeezed lemon juice to curdle the milk.
Once the milk gets curdled, switch off the stove and after a while use a muslin cloth the strain it. Strain it well, drain all the water and collect the cottage cheese.
Using your hands, mash the cottage cheese till it becomes a smooth mixture.
Now, to make the syrup for rasgulla, in a wide pan, boil the water and add jaggery to it.
As the syrup continues boiling, make small balls out of the cheese.
Add the balls made out of the cheese into the jaggery syrup, and cook it for another 20 minutes. Check consistency and serve hot or chilled as per your choice. Share this delicious sweet preparation with your family and loved ones.
