It’s Diwali! The time to light divas and make special dishes. Among the sweets and desserts that are popular in Diwali, especially in Maharashtra, is the Shankarpali / Shankarpale or the Shakkarpara. It literally means a snack made of sugar. This light and comparatively less sweet food item is a treat!

We share a recipe for the Shakkarapara by Chef Ruchi Bharani, as she explains in this Rajshri Entertainment video how exactly to make this sweet diamond-shaped snack item. The recipe for the Shakkarpara by Ruchi Bhirani is as follows:

Ingredients: 1 cup sugar, 1 cup water, 1/2 cup ghee (clarified butter), salt, flour.

Method: Put sugar, water and put them to boil. Mix well and wait till all the sugar dissolves. Pour ghee and let the syrup boil for 2-3 mins on low flame. Take off the boiling syrup off the flame and pour it in a bowl and let it cool. Add pinch of salt, enoughflour to make a soft kneaded dough. Take a portion of the dough and roll it into a 2 mm thick roti. Cut them into small square or diamond shaped pieces. Deep fry them till golden brown in color in medium flame. Once done, place them on kitchen towel. Cool them and store them in air tight container.
