6 Quick Fix Summer Snacks

Check out these easy to make desi infused snacks to stay cool this summer.

The summer brings with it such high temperatures that at times, even when one is hungry, it’s difficult to eat anything too heavy and/or hot because it just makes one feel even more sweaty and lethargic. We have thus come up with a few summer snack suggestions that provide a cooling effect and will quench your taste buds without feeling heavy afterwards.

1. AVOCADO TOAST

(Serves 2)

Ingredients

  • 2 slices thick, rustic bread, toasted
  • 2 tablespoons mint chutney

  • 1 ripe avocado, halved, seeded, peeled and thinly sliced
  • 2 teaspoons extra virgin olive oil
  • 2 teaspoons roasted cumin powder
  • Kosher salt and freshly ground black pepper, to taste

Directions

Spread 1 tablespoon mint chutney per bread. Evenly layer avocado slices on top of chutney. Drizzle with olive oil and top with cumin powder, salt, and pepper.

2. STRAWBERRY LASSI

Ingredients

  • 1 pound frozen strawberries
  • 1 cup whole Greek yogurt
  • 2 tablespoons agave syrup
  • ½ teaspoon cardamom powder
  • 3 cloves

Directions

In a blender, puree the strawberries, yogurt, agave syrup, cardamom powder, and cloves until smooth. Pour evenly into two glasses. Serve immediately.

3. BANANA-PEANUT BUTTER ICE CREAM

Ingredients

  • 2 large, slightly over-ripe bananas
  • 1 tablespoon peanut butter
  • 2 teaspoons honey
  • 1/4 teaspoon nutmeg powder
  • 1/8 teaspoon cinnamon powder

Directions

Peel banana and cut into chunks. Freeze the chunks. Once frozen, put them in a food processor with peanut butter, honey, nutmeg powder, and cinnamon powder. Puree until creamy, like soft serve ice cream, stopping the processor to scrape the sides when necessary.

4. GRAPE, POMEGRANATE, AND FENNEL CHAAT

(Serves 2 to 3)

Ingredients

  • 1 cup green grapes, halved
  • ¼ cup pomegranate arils
  • ¼ cup sliced fennel bulb
  • 1 teaspoon lemon juice
  • 1 teaspoon chaat masala
  • ½ teaspoon roasted cumin powder
  • ¼ teaspoon black salt

Directions

Place all ingredients and toss to combine. Refrigerate and eat cold.

5. MANGO POP STICKS

(Serves 6)

  • 1 cup puréed mango
  • 2 tablespoons sugar
  • Lime or lemon juice to taste
  • 2 tablespoons chopped fresh mint
  • 6 ice-pop sticks

Directions

Place mango purée in a medium bowl. Heat 1/4 cup water and sugar, stirring until sugar dissolves. Add to purée with lime or lemon juice to taste. Stir in mint. Stir everything once more to ensure proper mixing.

Fill ice-pop molds with mango puree mixture; leave room at the top to allow for expansion, set the lids in place, and insert the sticks through the holes. Freeze until firmly set, 3 to 4 hours.

6. CAPRESE SALAD WITH BASIL CHUTNEY

(Serves 4 to 6)

Ingredients

  • 3 vine-ripe tomatoes, 1/4-inch thick slices
  • 1 pound fresh mozzarella, 1/4-inch thick slices
  • 20 leaves (about 1 bunch) fresh basil
  • Coarse salt to taste
  • basil chutney, for drizzling

Directions

Layer alternating slices of tomatoes and mozzarella, adding a basil leaf between each, on a large, shallow platter. Season with salt and drizzle with basil chutney.
