Holi is the perfect opportunity for Indians to not just spend some fun time with family and friends and leave all their worries for tomorrow, but also to gorge on delicious home made sweets and snacks. There are many Indian specialities that are only made on Holi, including sweets and drinks with thandai, and yummy savoury snacks like namak paara, pakodas etc. Holi desserts generally include a lot of dry fruits and kesar and are generally milk-based sweets, like Bengali favourites rasogullas, cham cham, sondesh and others.
One such sweet to make during your Holi party this year is the kesar malai laddoo that is prepared from the cream collected on top of boiled milk, cottage cheese or paneer, saffron, jaggery and nuts and dried fruits. The specialty of this dry sweet that looks like the milk peda, lies in its creamy smooth melt-in-the-mouth texture that makes the perfect treat for the little ones as well as for the adults. The recipe is by the chef at restaurant 29 in Mumbai. The restaurant serves authentic regional food from all 29 states of India.

Ingredients:
200 grams Paneer
400 grams Malai
100 grams Jaggery
25-30 Threads Saffron
10-15 Pistachios
4-5 Cardamon
Method
1. Put the malai in a sauce pan and stir fry for 2-3 minutes
2. When the malai has melted, grate and add the paneer to it and continue to stir fry
3. After the mix gets thick, mix in the saffron in with 1 tbsp milk and then add it to the mixture
4. Stir fry continuously until it becomes thick
5. Take out the mixture and let it cool and the jaggery a little by little
6. Take a little amount and shape it in round balls like ladoos
7. Garnish with chopped pistachios
