Most of the women working long hours these days and there is little time left for cooking. You work hard all day and when you return home you need some simple, quick and healthy recipes. You need healthy food to stay active all day long. So, we bring you some quick and healthy snack recipes for working women. These recipes are shared with us by Chef Shipra Khanna who hosts the show ‘Snack in the Box’ on Living Foodz.

Chimichurri Grissini Breadsticks

Ingredients:

1 tbsp Dried yeast

500 gms All Purpose Flour

2 tbsp Butter

½ cup Milk

1 tbsp Olive oil

A pinch of Sugar

Salt to taste

Toppings:

2 tbsp Chimichurri

½ cup Parmesan Cheese (grated)

Method:

Sift the flour into a bowl and keep aside.

Soak yeast in little bit of lukewarm water with sugar for a few minutes till it becomes frothy.

Melt butter in a small pan and mix in olive oil and salt.

Add the frothy yeast, a mixture of melted butter, olive oil and salt to it and mix well.

Add milk and knead it to make the dough. Cover and set aside to rest for an hour.

Make small balls of the dough and roll them into thin long strips with your hands and put them on the baking tray.

Brush them with chimichurri and sprinkle parmesan on top. Now keep them aside to rest for 20-25 min till they double in size.

Preheat the oven to 180 degrees. Put the tray in and bake for 20-25 minutes.

Serve with any soup.

Flavored Makhana

Ingredients:

3 bowls Makhana

3 tbsp Olive Oil

1 ½  tbsp Kasuri Methi

2 tsp Black Salt

1 ½ tbsp Paav Bhaji Masala

2 tbsp Caster Sugar

1 tsp Red Chilli Powder

Method:

Kasuri Methi Flavor: Heat a pan and dry roast the makhanas for some time. Add a little bit of olive oil and toss for a while. Now add kasuri methi and black salt. Toss them and remove from the flame. Kasuri Methi flavored makhana is ready.

Paav Bhaji Flavor: Heat a pan and dry roast the makhanas for some time. Add a little bit of olive oil and toss for a while. Now add paav bhaji masala. Toss them and remove from the flame. Paav Bhaji flavored makhana is ready.

Sweet Chilli Flavor: Heat a pan and dry roast the makhanas. Add a little bit of olive oil and toss for a while. Now add castor sugar and stir quickly as it starts to caramelize. Remove from flame and add red chili powder and toss to mix well. Sweet Chilli flavored makhana is ready.

Ingredients:

1 ½ cup All Purpose Flour

½ tsp Baking Powder

1 tsp Cinnamon Powder

¾ cup Butter

1 cup Sugar

2 Eggs

2 Ripe Bananas

2 cup plain Oats

1 tbsp Vanilla Essence

Method:

In a large mixing bowl, add butter and sugar, whisk them till light and fluffy. Now add eggs, whisk again to make a creamy batter.

In a mixing bowl, mash ripe bananas with a fork. Now add them to the creamy batter, add vanilla essence and mix well.

Sift the flour with the baking powder and cinnamon powder into a bowl and mix them.

Add oats to it and mix again. Add it to the banana mixture to make a dough.

Divide the dough into small portions and roll into balls and press them gently with your fingers to flatten them a little bit.

Dust a baking tray lightly with flour and arrange the cookies on it.

Preheat the oven to 180 degree. Put the tray in the preheated oven and bake for about 20-25 minutes till the cookies are golden in color.

Remove and allow the cookies to cool completely.
