Puran Poli is a traditional Maharashtrian sweet dish that is prepared during the festivals of Holi and Gudi Padwa, that is the Maharashtrian New Year. Puran Poli is a paratha that is stuffed with a sweet lentil stuffing and is normally served with sweet Gujarati kadhi. The dish is closely associated with Holi and is prepared in most Maharashtrian households during the festival. According to folklore, the dish was offered to the Gods during the lighting of the customary Holi bonfire, that will be lit on March 12 this year.
The dish that is offered as food to the Gods it referred to as naivedya and that is what puran poli is for the Maharashtrians. The tradition is followed by Maharashtrians till date and puran poli is offered to guests the next morning, that is, the morning of the day of the main Holi or as it’s known in North India, Dulandi, when people play with colours. Puran Poli also finds mention in the commonly used Maharashtrian maxim about the perfect daughter-in-law, that says, “Sun sugran aahe zar ti puran poli changli karte” (the girl is good if she can prepare tasty puran poli). Here we have brought to you the traditional Maharashtrian recipe of puran poli, without which your Holi celebrations are incomplete. Ingredients:
1 Bowl Bengal Gram/Chana Dal
1 Bowl Jageery/Gul
1 Bowl Whole Wheat Flour
Half Cup Refined Flour/Maida
Half Inch Dry Ginger
2 tsp Fennel Seeds
5 to 6 Green Cardamom
10 to 12 Pepper Corn
2 pieces of Cinnamon
Pinch of Salt
2 tsp Cooking Oil
Clarified Butter as Required
Method:
1. Wash and rinse the Chana Dal.
2. Keep 3 cups water for boiling. Put a few drops of oil in water and let it boil.
3. Add washed chana dal when the water starts boiling and let the dal cook.
4. Meanwhile, crush all the dry whole garam masala and make a fine powder. Grind it well. Crush jaggery as well.
5. Check dal and add water if required. Till dal cooks start kneading dough for Puran Poli. Take both the flours, add a pinch of salt and prepare the dough. Keep it aside for a while .
6. Check dal and if its done then remove from flame. Don’t over cook it.
7. Remove excess water from dal and keep that water separately. This water is called Kat or Yelwani in Marathi and Katachi aamti is being prepared by using this water. So keep aside this water.
8. Now keep the dal’s vessel on the heat and put crushed jaggery and dry masala powder in it and sauté on low flame. ALSO READ: Unique Holi Sweets Recipes: How to make colourful jujube candy and macarons in easy steps
9. Roast till the jaggery starts melting and keep stirring.
10. Add a pinch of salt and 2 tsp sajuk tup (clarified butter).
11. Once jaggery completely melts, turn off the flame and make a fine paste of this batter.
12. Traditionally Puran is made on a Grinding Stone. But you can use Puranyantra or Grinder.
13. Once Puran is done, take the dough and beat it to make more softer.
14. Beat the dough until it becomes elastic. Take a small ball of dough and stuff Puran inside it and seal it properly. 15. Remember Puran should be more then dough.
16. Now Dust your platform with wheat flour and start rolling the Puran Poli.
17. Put some Sajuk Tup on heated Tava/Griddle and then place rolled puran poli in the centre .
18. Roast both sides over medium heat.
19. Add sajuk tup on the sides of Puran Poli and serve this Puran Poli with Sajuk Tup, Milk or Katachi Aamti.
